- 1 cup shredded cheddar cheese (or a cheese blend)
- 1 cup cooked broccoli florets (finely chopped)
- 1/2 cup sour cream
- 1/2 cup milk
- 1/4 cup olive oil
Instructions
- Preheat the oven according to the corn muffin mix instructions. Grease or line a baking dish.
- In a large bowl, combine the corn muffin mix, shredded cheddar cheese, chopped broccoli, sour cream, milk, and olive oil. Stir until just combined.
- Pour the batter into the prepared baking dish.
- Bake according to the corn muffin mix package instructions or until a toothpick inserted in the center comes out clean.
- Let cool slightly before serving.
