- 1 lb (450g) ground beef
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 cups heavy cream
- 1 cup beef broth
- 1 cup grated Parmesan cheese
- 1 package (20 oz) refrigerated cheese tortellini
- 2 cups fresh spinach
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add ground beef and season with salt, pepper, and Italian seasoning. Cook until browned.
- If needed, drain the excess fat from the skillet.
- Add minced garlic and red pepper flakes (if using) to the beef. Sauté for 30 seconds until fragrant.
- Pour in beef broth and heavy cream, stirring to combine. Bring to a gentle simmer.
- Gradually add Parmesan cheese while stirring until melted and smooth.
- Add the spinach and cook for 2-3 minutes until wilted.
- Stir in cooked tortellini, making sure everything is well coated.
- Sprinkle shredded mozzarella cheese over the top, cover, and let it melt for 2 minutes.
- Garnish with fresh parsley and serve warm.
Notes
Serve hot with a fresh green salad or warm garlic bread. Leftovers can be stored for up to 3 days in the refrigerator.
