- 9 oz cheese tortellini
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 (10 oz) can enchilada sauce (red or green)
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/4 cup sour cream
- Fresh cilantro, chopped (for garnish)
Instructions
- Cook the cheese tortellini according to the package instructions. Drain and set aside.
- While the tortellini cooks, brown the ground beef in a large skillet over medium heat.
- Add the chopped onion and minced garlic, cooking until the onion softens.
- Stir in the chili powder, cumin, paprika, salt, and pepper. Mix well and cook for 1-2 minutes until fragrant.
- Pour in the enchilada sauce and stir to combine. Let it simmer for 5 minutes.
- Add the cooked tortellini to the skillet, stirring to coat with the beef and sauce mixture.
- Sprinkle the mozzarella and cheddar cheeses over the top. Cover the skillet and cook for 2-3 minutes, or until the cheese is melted.
- Remove from heat, and stir in the sour cream for added creaminess.
- Garnish with fresh chopped cilantro and serve warm.
Notes
Drain tortellini well to avoid excess water in the dish. Use lean ground beef for a healthier option.
