  • 9 oz cheese tortellini
  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 (10 oz) can enchilada sauce (red or green)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Cook the cheese tortellini according to the package instructions. Drain and set aside.
  2. While the tortellini cooks, brown the ground beef in a large skillet over medium heat.
  3. Add the chopped onion and minced garlic, cooking until the onion softens.
  4. Stir in the chili powder, cumin, paprika, salt, and pepper. Mix well and cook for 1-2 minutes until fragrant.
  5. Pour in the enchilada sauce and stir to combine. Let it simmer for 5 minutes.
  6. Add the cooked tortellini to the skillet, stirring to coat with the beef and sauce mixture.
  7. Sprinkle the mozzarella and cheddar cheeses over the top. Cover the skillet and cook for 2-3 minutes, or until the cheese is melted.
  8. Remove from heat, and stir in the sour cream for added creaminess.
  9. Garnish with fresh chopped cilantro and serve warm.

Notes

Drain tortellini well to avoid excess water in the dish. Use lean ground beef for a healthier option.
