- 2 tablespoons olive oil

Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine all the sliced vegetables.
- Add olive oil, salt, and pepper, and toss to coat.
- Layer the vegetables in a baking dish.
- Sprinkle shredded cheese evenly over the vegetables.
