- 1 bunch fresh asparagus, trimmed
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 4 slices cooked bacon, chopped
- 2 eggs
- 1/2 cup heavy cream
- 2 green onions, sliced
- Salt & pepper, to taste
- Butter or oil (for greasing)
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- In a bowl, whisk eggs and cream with salt, pepper, and half the cheese. Pour into the baking dish.
- Arrange asparagus spears over the egg mixture.
- Sprinkle remaining cheese, chopped bacon, and green onions over the top.
- Bake for 25–30 minutes, or until cheese is bubbly and golden brown.
Notes
For extra flavor, add garlic powder or herbs like thyme or oregano. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
