- 2 cups chocolate crackers
- 1/4 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/4 cup cocoa powder
- 1/2 cup cherry pie filling
- 1/2 cup fresh cherries (optional, for decoration)
- 1/2 cup semi-sweet chocolate chips
- 2 tablespoons heavy cream
Instructions
- Preheat the oven to 325°F (163°C).
- Combine chocolate crackers and melted butter until crumbly. Press this mixture into the bottom of a 9-inch round pan. Bake for 10 minutes, then let it cool.
- In a mixing bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in cocoa powder and cherry pie filling until combined.
- Pour the cheesecake filling over the cooled crust. Bake for 50-60 minutes until the center is set but jiggles slightly.
- Turn off the oven and let the cheesecake cool inside with the door slightly ajar for 1 hour.
- Refrigerate for at least 4 hours or overnight.
- Once chilled, spread cherry pie filling over the cheesecake.
- Melt chocolate chips with heavy cream and drizzle over the top.
- Garnish with fresh cherries, slice, and serve.
Notes
Store any leftover cheesecake in the refrigerator for up to a week or freeze for up to 3 months. Take it out of the refrigerator 30 minutes before serving for better texture.
