Description

This delightful dessert combines rich chocolate with the tang of cherries, featuring a chocolate cracker crust, creamy filling, and luscious cherry topping.


Ingredients

  • 2 cups chocolate crackers
  • 1/4 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup cocoa powder
  • 1/2 cup cherry pie filling
  • 1/2 cup fresh cherries (optional, for decoration)
  • 1/2 cup semi-sweet chocolate chips
  • 2 tablespoons heavy cream

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Combine chocolate crackers and melted butter until crumbly. Press this mixture into the bottom of a 9-inch round pan. Bake for 10 minutes, then let it cool.
  3. In a mixing bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in cocoa powder and cherry pie filling until combined.
  4. Pour the cheesecake filling over the cooled crust. Bake for 50-60 minutes until the center is set but jiggles slightly.
  5. Turn off the oven and let the cheesecake cool inside with the door slightly ajar for 1 hour.
  6. Refrigerate for at least 4 hours or overnight.
  7. Once chilled, spread cherry pie filling over the cheesecake.
  8. Melt chocolate chips with heavy cream and drizzle over the top.
  9. Garnish with fresh cherries, slice, and serve.

Notes

Store any leftover cheesecake in the refrigerator for up to a week or freeze for up to 3 months. Take it out of the refrigerator 30 minutes before serving for better texture.
