- 2 cups chocolate crackers
- 1/4 cup unsalted butter, melted
- 3 (8 oz each) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/4 cup cocoa powder
- 1/2 cup cherry pie filling
- 1/2 cup fresh cherries (optional, for decoration)
- 1/2 cup semi-sweet chocolate pieces
- 2 tablespoons heavy cream
Instructions
- Preheat the oven to 325°F (163°C).
- Combine chocolate cookies and melted butter until crumbly. Press this mixture into the bottom of a 9-inch pan. Bake for 10 minutes and then let it cool.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in cocoa powder and cherry pie filling.
- Pour the cream cheese filling into the cooled crust. Bake for 50-60 minutes, until the cheesecake is set but still slightly jiggly in the center.
- Turn off the oven and leave the cheesecake inside for 1 hour, with the door slightly ajar.
- Refrigerate the cheesecake for at least 4 hours or overnight.
- Once cold, spread cherry pie filling over the top of the cheesecake.
- Melt the chocolate pieces with heavy cream and drizzle it over the cheesecake.
- Garnish with fresh cherries if using, slice, and serve.
Notes
For best results, use room temperature cream cheese and avoid overmixing after adding eggs to prevent cracks.
