Ingredients

  • 2 cups chocolate crackers
  • 1/4 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup cocoa powder
  • 1/2 cup cherry pie filling
  • 1/2 cup fresh cherries (optional, to decorate)
  • 1/2 cup chocolate chips
  • 2 tablespoons heavy cream

Instructions

  1. Preheat the oven to 325°F (163°C). Combine chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch pan. Bake for 10 minutes, then let it cool.
  2. Beat the cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Mix in cocoa powder until combined.
  3. Pour the cheesecake filling over the crust. Bake for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour with the door slightly ajar.
  4. Place the cheesecake in the refrigerator for at least 4 hours or overnight.
  5. Spread the cherry pie filling over the cold cheesecake. Melt chocolate chips with heavy cream and drizzle on top.
  6. Top with fresh cherries for decoration and slice to serve.

Notes

Ensure cream cheese is at room temperature for easy mixing. Don’t overmix to prevent cracks.
