- 3/4 cup full-fat cream cheese, room temperature
- 2 tablespoons white sugar
- 1/2 teaspoon vanilla extract
- 3/4 cup salted butter, room temperature
- 1 cup brown sugar
- 1/2 cup white sugar
- 1 large egg
- 1 egg yolk
- 1 tablespoon buttermilk
- 2 teaspoons vanilla extract
- 1 tablespoon red food coloring
- 2 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup white sugar (for rolling the cookie dough)
Instructions
- Prepare the Cheesecake Filling: In a medium bowl, combine cream cheese, white sugar, and vanilla extract. Use an electric mixer to blend until smooth. Scoop out 18 portions and place them on a parchment-lined baking sheet. Freeze until firm.
- Make the Red Velvet Cookies: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper. Cream together butter, brown sugar, and white sugar until fluffy. Add the egg and yolk, then mix in the vanilla, buttermilk, and red food coloring. In another bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Combine the dry and wet ingredients.
- Assemble the Cookies: Scoop 3 tablespoons of dough, flatten it, and place a cheesecake ball in the center. Wrap the dough around the filling and roll it into a ball. Roll in sugar and place on baking sheets. Bake for 13 minutes until golden brown. Allow to cool completely before serving.
Notes
Make sure cream cheese is at room temperature for a smooth filling. If you don’t have buttermilk, use milk with a bit of vinegar or lemon juice as a substitute.
