- 1/4 cup granulated sugar

- 1 egg yolk
- 1/4 cup granulated sugar (for coating)

Instructions
- Make the Cheesecake Filling: In a medium bowl, beat together the softened cream cheese, sugar, vanilla extract, and egg yolk until smooth and creamy. Chill for about 30 minutes.
- Prepare the Cookie Dough: In another bowl, whisk together the flour, baking soda, salt, and cinnamon. In a large bowl, beat the butter and sugar together until light and fluffy. Add the egg and vanilla extract; mix well. Gradually add the dry ingredients.
- Assemble the Cookies: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop out about 1 tablespoon of dough, flatten it, place 1 teaspoon of cheesecake filling in the center, and fold the dough around the filling, sealing it completely.
- Coat the Cookies: Mix sugar and cinnamon in a small bowl. Roll each stuffed cookie ball in this mixture until fully coated.
- Bake the Cookies: Bake for 10-12 minutes until golden brown. Allow to cool before serving.
Notes
For a different flavor, add chocolate chips or nuts to the dough. You can also use flavored cream cheese for the filling.
