Delicious and easy cheesecake squares made with a creamy filling and crumbly crust.
Ingredients

- 1/3 cup salted butter
- 1/3 cup packed light brown sugar
- 1 cup all-purpose flour
- 1/2 cup finely ground walnuts
- 1/4 cup granulated white sugar
- 1 large egg
- 2 tablespoons milk
- 1 tablespoon freshly squeezed lemon juice
- 1/2 teaspoon vanilla extract
- 8 ounces cream cheese, at room temperature
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch or 9×9-inch baking pan with nonstick spray.
- In a medium bowl, cream together the butter and light brown sugar until light and fluffy.
- Add the flour and ground walnuts, and blend until the mixture forms coarse crumbs. Set aside 1/2 cup of this mixture for topping.
- Press the remaining crumb mixture evenly into the bottom of the prepared pan.
- Bake the crust for 10 to 12 minutes, or until golden brown. Remove from the oven and set aside.
- In a large bowl, combine the sugar, egg, milk, lemon juice, vanilla extract, and cream cheese. Beat with an electric mixer until smooth.
- Pour the cheesecake filling over the hot crust.
- Sprinkle the reserved crumb mixture on top of the filling.
- Return the pan to the oven and bake for 25 minutes or until the filling is set and the top is lightly golden.
- Remove from the oven and allow to cool completely in the pan. Once cooled, refrigerate until firm (about 2 hours), then slice into squares and serve.
Notes
Serve plain or with toppings like fresh berries or whipped cream. Can be made in advance and stored in the refrigerator.
