Description

Delicious and easy cheesecake squares made with a creamy filling and crumbly crust.


Ingredients

  • 1/3 cup salted butter
  • 1/3 cup packed light brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup finely ground walnuts
  • 1/4 cup granulated white sugar
  • 1 large egg
  • 2 tablespoons milk
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 teaspoon vanilla extract
  • 8 ounces cream cheese, at room temperature

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch or 9×9-inch baking pan with nonstick spray.
  2. In a medium bowl, cream together the butter and light brown sugar until light and fluffy.
  3. Add the flour and ground walnuts, and blend until the mixture forms coarse crumbs. Set aside 1/2 cup of this mixture for topping.
  4. Press the remaining crumb mixture evenly into the bottom of the prepared pan.
  5. Bake the crust for 10 to 12 minutes, or until golden brown. Remove from the oven and set aside.
  6. In a large bowl, combine the sugar, egg, milk, lemon juice, vanilla extract, and cream cheese. Beat with an electric mixer until smooth.
  7. Pour the cheesecake filling over the hot crust.
  8. Sprinkle the reserved crumb mixture on top of the filling.
  9. Return the pan to the oven and bake for 25 minutes or until the filling is set and the top is lightly golden.
  10. Remove from the oven and allow to cool completely in the pan. Once cooled, refrigerate until firm (about 2 hours), then slice into squares and serve.

Notes

Serve plain or with toppings like fresh berries or whipped cream. Can be made in advance and stored in the refrigerator.
