Cheesecake Squares are a delightful treat combining a buttery crust with a creamy cheesecake filling, perfect for any occasion.

- 1/3 cup salted butter
- 1/3 cup packed light brown sugar
- 1 cup all-purpose flour
- 1/2 cup finely ground walnuts
- 1/4 cup granulated white sugar
- 1 large egg
- 2 tablespoons milk
- 1 tablespoon freshly squeezed lemon juice
- 1/2 teaspoon vanilla extract
- 8 ounces cream cheese, at room temperature
Instructions
- Preheat oven to 350°F (175°C) and grease an 8×8-inch or 9×9-inch baking pan.
- In a medium bowl, cream together butter and light brown sugar until fluffy. Add flour and ground walnuts, blend to form coarse crumbs.
- Reserve 1/2 cup of the crumb mixture for topping and press the remaining into the bottom of the pan. Bake for 10 to 12 minutes until golden brown. Set aside.
- In a large bowl, mix sugar, egg, milk, lemon juice, vanilla extract, and cream cheese until smooth. Pour over the hot crust and sprinkle reserved crumbs on top.
- Return to oven and bake for 25 minutes until filling is set and top is lightly golden. Allow to cool, then refrigerate for about 2 hours until firm. Slice into squares and serve.
Notes
Serve plain or with toppings like chocolate sauce, fresh fruits, or whipped cream. Store in an airtight container in the refrigerator for up to a week.
