Description

A delightful twist on traditional cheesecake, these sweet, fruity roll-ups make a perfect dessert or fun snack, bursting with fresh fruits and a creamy filling.


Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1 1/2 cups powdered sugar
  • 6 oz. cream cheese, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/4 cups whipped cream (or 1/2 cup + 2 Tbsp. chilled heavy cream with 2.5 Tbsp. powdered sugar, whipped)
  • 2/3 cup fresh blueberries
  • 2/3 cup fresh strawberries, diced
  • 3 small peaches, peeled and diced
  • 2 kiwis, peeled and diced
  • 1/2 cup fresh raspberries, halved
  • 2 (1 oz.) boxes sugar-free vanilla instant pudding
  • 45 large tortillas, room temperature
  • 23 Tbsp unsalted butter, melted
  • 1/2 cup sugar
  • 1 teaspoon cinnamon

Instructions

  1. In a chilled bowl, beat heavy cream and powdered sugar until stiff peaks form. Set aside.
  2. In a large bowl, cream together butter, cream cheese, vanilla extract, and powdered sugar until smooth. Fold in the whipped cream and mix until combined.
  3. Gently fold in blueberries, strawberries, peaches, and kiwis. Add the raspberries at the end to prevent coloring the mix too early.
  4. Stir in the sugar-free vanilla instant pudding powder to thicken the mixture.
  5. Refrigerate the filling mixture for about 30 minutes to firm up and make spreading easier.
  6. Spread the chilled cheesecake fruit filling over the tortillas evenly. Place raspberries on top, then roll the tortillas tightly.
  7. Brush the outside of each roll-up with melted butter, then roll them in the cinnamon-sugar mixture. Cut into slices and serve immediately.

Notes

For extra flavor, add a squeeze of lemon juice to the fruit mixture. Use room-temperature cream cheese for easier mixing. Try different fruits based on your liking or seasonal availability.
