A delightful twist on traditional cheesecake, these sweet, fruity roll-ups make a perfect dessert or fun snack, bursting with fresh fruits and a creamy filling.

- 1/2 cup unsalted butter, room temperature
- 1 1/2 cups powdered sugar
- 6 oz. cream cheese, room temperature
- 1 teaspoon vanilla extract
- 1 1/4 cups whipped cream (or 1/2 cup + 2 Tbsp. chilled heavy cream with 2.5 Tbsp. powdered sugar, whipped)
- 2/3 cup fresh blueberries
- 2/3 cup fresh strawberries, diced
- 3 small peaches, peeled and diced
- 2 kiwis, peeled and diced
- 1/2 cup fresh raspberries, halved
- 2 (1 oz.) boxes sugar-free vanilla instant pudding
- 4–5 large tortillas, room temperature
- 2–3 Tbsp unsalted butter, melted
- 1/2 cup sugar
- 1 teaspoon cinnamon
Instructions
- In a chilled bowl, beat heavy cream and powdered sugar until stiff peaks form. Set aside.
- In a large bowl, cream together butter, cream cheese, vanilla extract, and powdered sugar until smooth. Fold in the whipped cream and mix until combined.
- Gently fold in blueberries, strawberries, peaches, and kiwis. Add the raspberries at the end to prevent coloring the mix too early.
- Stir in the sugar-free vanilla instant pudding powder to thicken the mixture.
- Refrigerate the filling mixture for about 30 minutes to firm up and make spreading easier.
- Spread the chilled cheesecake fruit filling over the tortillas evenly. Place raspberries on top, then roll the tortillas tightly.
- Brush the outside of each roll-up with melted butter, then roll them in the cinnamon-sugar mixture. Cut into slices and serve immediately.
Notes
For extra flavor, add a squeeze of lemon juice to the fruit mixture. Use room-temperature cream cheese for easier mixing. Try different fruits based on your liking or seasonal availability.
