Cheeseburger Rollups are a fun, easy twist on the classic cheeseburger, perfect for quick dinners or snacks.
Ingredients

- 1 lb ground beef
- 1/2 small onion, finely chopped
- Salt & black pepper, to taste
- 1/2 tsp garlic powder
- 1 tbsp ketchup (optional)
- 1 cup shredded cheddar cheese (plus extra for topping)
- 6 flour tortillas
- 1 tbsp butter (for brushing)
Instructions
- In a skillet, cook the ground beef and onion over medium heat until browned. Drain any excess grease. Add garlic powder, salt, pepper, and ketchup. Stir well to combine.
- On each tortilla, sprinkle cheese and add a scoop of the beef mixture. Roll the tortillas tightly and place them seam-side down on a parchment-lined baking sheet.
- Brush the tops of the rollups with melted butter and sprinkle extra cheese on top. Bake in a preheated oven at 375°F (190°C) for 12–15 minutes until golden and the cheese is melted.
- Let the rollups cool slightly, slice if desired, and serve with your favorite dipping sauces.
Notes
Don’t overfill the tortillas and feel free to customize with your favorite cheeseburger toppings. Make ahead by preparing the beef mixture and assembling the rollups for later baking.
