Ingredients

  • 1 medium head of cauliflower (or 4 cups riced cauliflower)
  • 1 tbsp olive oil
  • 1 clove garlic (minced)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp ground cumin (optional)
  • 1 lb grilled chicken breast (sliced)

Instructions

  1. Prepare the cauliflower by ricing it or chopping it into small pieces.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Stir in the riced cauliflower, salt, black pepper, and cumin (if using).
  5. Cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender.
  6. Top the cauliflower rice with sliced grilled chicken and serve.

Notes

Make sure not to overcook the cauliflower; it should be tender but not mushy. You can use a food processor to rice the cauliflower quickly.
