Ingredients

- 1 medium head of cauliflower (or 4 cups riced cauliflower)
- 1 tbsp olive oil
- 1 clove garlic (minced)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp ground cumin (optional)
- 1 lb grilled chicken breast (sliced)
Instructions
- Prepare the cauliflower by ricing it or chopping it into small pieces.
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the riced cauliflower, salt, black pepper, and cumin (if using).
- Cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender.
- Top the cauliflower rice with sliced grilled chicken and serve.
Notes
Make sure not to overcook the cauliflower; it should be tender but not mushy. You can use a food processor to rice the cauliflower quickly.
