Cauliflower Cake with Pecorino Romano & Sweet Basil

Description

A delicious and unique savory cake combining cauliflower, Pecorino Romano cheese, and sweet basil.


Ingredients

  • 1 medium cauliflower, outer leaves removed, broken into florets
  • 1 medium red onion, partly sliced then diced
  • 5 Tbsp. basil olive oil (or regular olive oil)
  • 1/2 tsp. finely chopped fresh rosemary
  • 6 eggs
  • 1 cup Pecorino Romano cheese, grated
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking dish.
  2. Steam the cauliflower florets until tender, about 5 minutes.
  3. In a skillet, heat the olive oil over medium heat. Add the red onion and sauté until soft.
  4. In a large bowl, beat the eggs. Add the cooked cauliflower, sautéed onions, chopped rosemary, Pecorino Romano, salt, and pepper. Mix well.
  5. Pour the mixture into the prepared baking dish and smooth the top.
  6. Bake for 30-35 minutes, or until set and golden on top.
  7. Let cool slightly before slicing. Serve warm or at room temperature.

Notes

Pairs well with a light salad; can be garnished with fresh basil leaves or extra cheese.
