- 1 lb (450g) boneless, skinless chicken breast or thighs, cut into bite-sized pieces
- 2 tbsp cornstarch
- 2 tbsp olive oil
- 1 cup broccoli florets
- 1/2 cup cashews
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 1/4 cup soy sauce
- 2 tbsp honey
- 1/4 cup chicken broth
- Salt and pepper to taste
Instructions
- In a bowl, toss the chicken with cornstarch and set aside.
- Heat olive oil in a large pan or wok over medium-high heat.
- Add the chicken and stir-fry until browned and cooked through, about 5-7 minutes.
- Add broccoli, cashews, garlic, and ginger; stir-fry for an additional 3-4 minutes.
- In a small bowl, mix soy sauce, honey, and chicken broth. Pour the mixture over the stir-fry and cook until heated through.
- Season with salt and pepper to taste. Serve hot.

Use fresh ingredients for the best flavor. Adjust the sweetness by modifying the amount of honey.
