Ingredients

  • 1 lb (450g) boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 2 tbsp cornstarch
  • 2 tbsp olive oil
  • 1 cup broccoli florets
  • 1/2 cup cashews
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1/4 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. In a bowl, toss the chicken with cornstarch and set aside.
  2. Heat olive oil in a large pan or wok over medium-high heat.
  3. Add the chicken and stir-fry until browned and cooked through, about 5-7 minutes.
  4. Add broccoli, cashews, garlic, and ginger; stir-fry for an additional 3-4 minutes.
  5. In a small bowl, mix soy sauce, honey, and chicken broth. Pour the mixture over the stir-fry and cook until heated through.
  6. Season with salt and pepper to taste. Serve hot.
