- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 1/2 cups grated carrots (about 2 medium carrots)
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- Powdered sugar (for dusting)
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 10×15-inch jelly roll pan with parchment paper and cooking spray.
- In a bowl, beat together eggs and granulated sugar until light and fluffy. Add vanilla extract and mix well.
- In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually combine the dry ingredients with the wet ingredients until mixed.
- Fold in the grated carrots. Pour the mixture into the prepared pan and bake for 12-15 minutes or until a toothpick comes out clean.
- Prepare a towel dusted with powdered sugar. Once baked, remove the cake and invert it onto the towel. Roll the cake with the towel and let it cool completely.
- For the filling, beat cream cheese and butter until smooth. Add vanilla and powdered sugar, mixing until fluffy.
- Once the cake is cooled, gently unroll it. Spread the cream cheese filling evenly over the surface, then roll it back into shape.
- Place the seam-side down on a platter. Refrigerate for 1 hour, then dust with powdered sugar before serving.
Notes
Make sure to grate the carrots finely for a smoother texture. Allow the cake to cool completely before adding the filling.
