Description

A delightful dessert combining moist carrot cake with rich cream cheese filling, wrapped into a beautiful roll.


Ingredients

  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 1/2 cups grated carrots (about 2 medium carrots)
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 10×15-inch jelly roll pan with parchment paper and cooking spray.
  2. In a bowl, beat together eggs and granulated sugar until light and fluffy. Add vanilla extract and mix well.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually combine the dry ingredients with the wet ingredients until mixed.
  4. Fold in the grated carrots. Pour the mixture into the prepared pan and bake for 12-15 minutes or until a toothpick comes out clean.
  5. Prepare a towel dusted with powdered sugar. Once baked, remove the cake and invert it onto the towel. Roll the cake with the towel and let it cool completely.
  6. For the filling, beat cream cheese and butter until smooth. Add vanilla and powdered sugar, mixing until fluffy.
  7. Once the cake is cooled, gently unroll it. Spread the cream cheese filling evenly over the surface, then roll it back into shape.
  8. Place the seam-side down on a platter. Refrigerate for 1 hour, then dust with powdered sugar before serving.

Notes

Make sure to grate the carrots finely for a smoother texture. Allow the cake to cool completely before adding the filling.
