  • 2 large eggs
  • 2 cups grated carrots
  • 1 cup chopped walnuts (optional)
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 375°F (190°C) and line a 10×15-inch jelly roll pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat sugar and softened butter until fluffy. Add eggs one at a time, mixing in vanilla extract.
  4. Gradually mix in the flour mixture and stir in grated carrots and walnuts (if using).
  5. Pour batter into the prepared pan, smooth the top, and bake for 12-15 minutes until a toothpick comes out clean. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  6. For the filling, beat cream cheese and butter together until smooth, then add vanilla and gradually mix in powdered sugar until creamy.
  7. Spread the filling evenly over the cooled cake, then roll it tightly from a long edge.
  8. Chill in the fridge for 30 minutes before slicing into spirals and serving.

Notes

Dust the parchment paper with powdered sugar to make rolling easier and to prevent sticking.
