Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together the grated carrots, sugars, and oil.
  3. In another bowl, combine flour, baking soda, cinnamon, and ginger.
  4. Gradually mix the dry ingredients into the wet ingredients.
  5. Add eggs and vanilla extract; mix until smooth.
  6. Divide the batter between the prepared pans.
  7. Bake for 25-30 minutes, or until a toothpick comes out clean.
  8. Allow cakes to cool completely.
  9. For the frosting, beat cream cheese and butter until smooth, then gradually mix in powdered sugar and vanilla.
