  • 1/4 cup heavy cream
  • 1/4 tsp salt (for caramel)
  • 1 tsp vanilla extract (for filling)
  • 1 cup heavy cream (for whipped cream)
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract (for whipped cream)
  • Caramel sauce (for drizzling)
  • Sprinkles (optional, for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and line a 10×15-inch jelly roll pan with parchment paper.
  2. Sift together flour, baking powder, and salt in a bowl and set aside.
  3. In a large bowl, beat eggs and granulated sugar until thick and pale. Add vanilla extract and water, mixing until smooth. Gradually fold in dry ingredients.
  4. Pour batter into the prepared pan and spread evenly. Bake for 10-12 minutes or until cake springs back when touched.
  5. Remove from oven and invert onto a kitchen towel dusted with powdered sugar. Roll the cake up with the towel and let it cool completely.
  6. In a saucepan, melt unsalted butter over medium heat. Stir in brown sugar, heavy cream, and salt, bringing it to a simmer. Cook for 3-4 minutes until thickened, then stir in vanilla extract and cool.
  7. Whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
  8. Once cooled, unroll the cake and spread a thin layer of caramel filling over it, then add whipped cream. Gently re-roll the cake.
  9. Transfer to a serving platter, drizzle with extra caramel sauce, and add sprinkles if desired.
  10. Slice, serve, and enjoy!

Notes

Be gentle while rolling to avoid cracking. Dust the towel with powdered sugar before rolling to prevent sticking.
