Ingredients

  • 1 cup (213g) brown sugar (light or dark, packed)
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups (330g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups (350g) semi-sweet chocolate chips
  • About 36 caramels
  • Flaky sea salt (optional, for sprinkling)

Instructions

  1. Preheat the oven to 375°F (190°C) and line sheet pans with parchment paper.
  2. In a large bowl or stand mixer, beat the softened butter, brown sugar, and granulated sugar on high speed until pale and creamy (about 3-4 minutes).
  3. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt; gradually add to the butter-sugar mixture.
  5. Stir in the chocolate chips.
  6. Scoop about 1 1/2 tablespoons of cookie dough onto the baking sheet.
  7. Press a caramel into the center of each dough ball, covering it fully.
  8. Bake for 9-10 minutes until golden brown.
  9. Cool on the sheet before transferring to a wire rack. Optionally sprinkle with flaky sea salt before serving.
