- 1 cup (213g) brown sugar (light or dark, packed)
- 1/2 cup (100g) granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 3/4 cups (330g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups (350g) semi-sweet chocolate chips
- About 36 caramels
- Flaky sea salt (optional, for sprinkling)
Instructions
- Preheat the oven to 375°F (190°C) and line sheet pans with parchment paper.
- In a large bowl or stand mixer, beat the softened butter, brown sugar, and granulated sugar on high speed until pale and creamy (about 3-4 minutes).
- Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt; gradually add to the butter-sugar mixture.
- Stir in the chocolate chips.
- Scoop about 1 1/2 tablespoons of cookie dough onto the baking sheet.
- Press a caramel into the center of each dough ball, covering it fully.
- Bake for 9-10 minutes until golden brown.
- Cool on the sheet before transferring to a wire rack. Optionally sprinkle with flaky sea salt before serving.
Notes
Use high-quality chocolate chips and caramels for best flavor. Store cookies in an airtight container at room temperature for up to a week or freeze for up to three months.
