Ingredients

  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mashed ripe bananas (about 3 bananas)
  • 1 cup sour cream
  • 1 cup chopped pecans
  • Frosting of your choice (cream cheese, buttercream, or chocolate ganache)
  • 1/2 cup caramel sauce, plus extra for drizzling
  • 1 cup banana slices (for garnish)
  • Extra pecans (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour four 7-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Add the mashed bananas and sour cream to the butter mixture, stirring until combined.
  6. Gradually mix in the dry ingredients until just incorporated. Gently fold in the chopped pecans.
  7. Divide the batter evenly between the prepared cake pans and smooth the tops.
  8. Bake for 25-30 minutes or until a toothpick comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  9. Place one cake layer on a serving plate. Add frosting, then add a second cake layer, frosting again. Top with the third layer and drizzle with caramel sauce.
  10. Add banana slices and extra pecans on top. Drizzle with more caramel sauce if desired.
  11. Serve with a generous drizzle of caramel sauce and enjoy!

Notes

Use overripe bananas for best flavor. You can also experiment with different frostings.
