Ingredients

  • 1 large egg
  • 1/2 cup light brown sugar, packed
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • Pinch of salt (optional, to taste)
  • 4 graham crackers, chopped into 1/2-inch pieces
  • 1 cup semi-sweet chocolate chips
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup creamy peanut butter

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with aluminum foil and spray it with cooking spray for easy cleanup.
  2. In a large, microwave-safe bowl, melt the butter in the microwave (about 1 minute) and let it cool slightly before adding the egg.
  3. Whisk in the egg, brown sugar, and vanilla until smooth.
  4. Stir in the flour and optional salt until just combined; be careful not to overmix.
  5. Spread the batter evenly into the prepared pan and smooth the top with a spatula.
  6. Sprinkle the chopped graham cracker pieces evenly over the top.
  7. Add the chocolate chips on top of the graham crackers.
  8. In the same bowl, combine the sweetened condensed milk and peanut butter; whisk until smooth.
  9. Pour the peanut butter mixture evenly over the bars and smooth the top lightly.
  10. Bake for about 28-31 minutes, or until the top is set and slightly golden.
  11. Allow the bars to cool in the pan for at least 3 hours before slicing into 9 pieces.
