Delightful cookies that combine classic cinnamon flavor with a gooey caramel center.

- 2 3/4 cups all-purpose flour
- 1 teaspoon cream of tartar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/4 cups granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 20 soft caramel candies
- 1/4 cup granulated sugar (for coating)
- 1 teaspoon ground cinnamon (for coating)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cream of tartar, baking soda, salt, and cinnamon.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
- Add the eggs and vanilla extract to the butter mixture, mixing until fully combined.
- Gradually add the dry ingredients into the wet mixture, mixing until a soft dough forms.
- Scoop about 1 1/2 tablespoons of dough, flatten it slightly, and place a caramel candy in the center.
- Wrap the dough around the caramel, sealing it completely so that the caramel is hidden inside.
- In a small bowl, mix the 1/4 cup of granulated sugar and 1 teaspoon of cinnamon to create the cinnamon sugar coating.
- Roll each dough ball in the cinnamon sugar mixture until fully coated.
- Arrange the dough balls on the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set and the tops look slightly cracked.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Notes
Store in an airtight container at room temperature for up to a week. Can be frozen for up to three months.
