Description

A decadent dessert combining chocolate, coffee, and a creamy cheesecake topped with homemade caramel sauce.


Ingredients

  • 2 cups (200g) chocolate cookie crumbs
  • 1/4 cup (60g) unsalted butter, melted
  • 3 (8 oz/225g) packages cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 3 large eggs
  • 1/2 cup (120ml) heavy cream
  • 2 tbsp instant coffee granules dissolved in 2 tbsp hot water
  • 1/2 cup (100g) semi-sweet chocolate, melted and slightly cooled
  • 1/2 cup (100g) granulated sugar (for caramel)
  • 2 tbsp water
  • 1/4 cup (60ml) heavy cream, warmed (for caramel)
  • 2 tbsp unsalted butter, softened (for caramel)
  • Whipped cream (for garnish)
  • Chocolate shavings or curls (for garnish)
  • Caramel drizzle (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a bowl, mix the chocolate cookie crumbs and melted butter until combined, then press into the bottom of the pan. Chill in the refrigerator.
  3. In a large mixing bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, beating well after each. Mix in heavy cream and dissolved coffee.
  4. Divide the batter into two bowls. Stir melted chocolate into one portion, pour coffee batter over the crust, followed by the chocolate batter. Swirl gently for a marbled effect.
  5. Wrap the pan in foil and bake in a water bath for 55-65 minutes until edges are set.
  6. Cool inside the oven for 1 hour, then refrigerate for at least 4 hours or overnight.
  7. For the caramel, combine sugar and water in a saucepan and cook until amber. Carefully stir in warm cream and whisk in softened butter. Let cool before pouring over cheesecake.
  8. Garnish with whipped cream and chocolate shavings, and drizzle with caramel before serving.

Notes

Use a water bath to prevent cracks. Store covered in the refrigerator for up to 5 days.
