Description

A delightful dessert combining creamy cheesecake with chocolate chips and sweet caramel, perfect for any occasion.


Ingredients

  • 2 1/4 cups chocolate sandwich cookie crumbs
  • 5 tbsp salted butter, melted
  • 24 ounces cream cheese, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 3 tbsp all-purpose flour
  • 1 cup sour cream
  • 1 tbsp vanilla extract
  • 4 large eggs, room temperature
  • 1 cup semi-sweet chocolate chips
  • 4 tbsp salted butter
  • 2/3 cup light brown sugar, packed
  • 3/4 cup heavy whipping cream
  • 1 tsp vanilla extract
  • 2 tsp corn syrup

Instructions

  1. Preheat the oven to 325°F (163°C). Line a 9-inch springform pan with parchment paper and grease the sides.
  2. Mix cookie crumbs with melted butter and press into the pan to form a crust. Bake for 10 minutes and allow to cool.
  3. Lower the oven temperature to 300°F (148°C). In a large bowl, mix together cream cheese, granulated sugar, brown sugar, and flour until smooth.
  4. Add sour cream and vanilla extract, mixing until combined. Add eggs one at a time, scraping sides as needed, and gently fold in chocolate chips.
  5. Pour the filling into the cooled crust and spread evenly.
  6. Place the springform pan inside a larger pan and add warm water to the larger pan. Bake for 1 hour and 10 minutes. Turn off the oven and let it cool inside for 30 minutes, then cool for another 30 minutes with the door slightly open.
  7. Chill in the fridge for at least 5-6 hours or overnight.
  8. For the caramel sauce, combine the remaining butter, brown sugar, heavy cream, vanilla extract, and corn syrup in a saucepan. Bring to a boil for 3 minutes, then remove from heat and cool for 15 minutes.
  9. Pour the caramel over the cheesecake and garnish with extra chocolate chips, if desired.
  10. Serve chilled and enjoy!

Notes

Make sure to keep the cheesecake refrigerated until serving. Best enjoyed within 3-4 days.
