Ingredients

  • 6 tablespoons unsalted butter (85 grams)
  • 1/2 cup heavy cream (120 ml)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 and 1/2 cups graham cracker crumbs (180 grams)
  • 1/4 cup brown sugar (55 grams)
  • 6 tablespoons unsalted butter, melted (85 grams)
  • 4 packages (907 grams) cream cheese, softened (8 oz each)
  • 1 cup brown sugar (220 grams)
  • 1/4 cup granulated sugar (50 grams)
  • 1/2 cup sour cream (120 grams)
  • 4 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Prepare the Caramel Sauce: Heat the granulated sugar in a saucepan over medium heat, stirring until it melts and turns golden. Add butter and heavy cream, mixing until smooth. Stir in vanilla extract and salt, then let cool.
  2. Preheat your Oven: Set your oven to 325°F (163°C).
  3. Make the Crust: Mix graham cracker crumbs and brown sugar in a bowl. Add melted butter and stir well. Press into the bottom of a springform pan. Bake for 10 minutes and let cool.
  4. Prepare the Cheesecake Batter: Beat the cream cheese in a large mixing bowl until creamy. Gradually mix in both sugars. Add sour cream and eggs, one at a time, followed by vanilla extract and salt.
  5. Assemble the Cheesecake: Pour half of the cheesecake batter over the crust. Drizzle some of the cooled caramel sauce on top, then pour the remaining batter over it.
  6. Bake the Cheesecake: Wrap the springform pan in foil and place it in a larger pan filled with water. Bake for 60-75 minutes, or until edges are set.
  7. Cool and Chill: Let the cheesecake cool in the oven for 1 hour, then refrigerate for at least 6 hours, or overnight.
  8. Serve: Warm remaining caramel sauce and pour it over the cheesecake. Sprinkle salt flakes for a finishing touch.
