- 1/2 cup heavy cream (120 ml)

- 1/4 cup brown sugar (55 grams)
- 6 tablespoons unsalted butter, melted (85 grams)
- 4 packages (907 grams) cream cheese, softened (8 oz each)
- 1 cup brown sugar (220 grams)
- 1/4 cup granulated sugar (50 grams)
- 1/2 cup sour cream (120 grams)
- 4 large eggs, room temperature
- 1 tablespoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Prepare the Caramel Sauce: Heat the granulated sugar in a saucepan over medium heat, stirring until it melts and turns golden. Add butter and heavy cream, mixing until smooth. Stir in vanilla extract and salt, then let cool.
- Preheat your Oven: Set your oven to 325°F (163°C).
- Make the Crust: Mix graham cracker crumbs and brown sugar in a bowl. Add melted butter and stir well. Press into the bottom of a springform pan. Bake for 10 minutes and let cool.
- Prepare the Cheesecake Batter: Beat the cream cheese in a large mixing bowl until creamy. Gradually mix in both sugars. Add sour cream and eggs, one at a time, followed by vanilla extract and salt.
- Assemble the Cheesecake: Pour half of the cheesecake batter over the crust. Drizzle some of the cooled caramel sauce on top, then pour the remaining batter over it.
- Bake the Cheesecake: Wrap the springform pan in foil and place it in a larger pan filled with water. Bake for 60-75 minutes, or until edges are set.
- Cool and Chill: Let the cheesecake cool in the oven for 1 hour, then refrigerate for at least 6 hours, or overnight.
- Serve: Warm remaining caramel sauce and pour it over the cheesecake. Sprinkle salt flakes for a finishing touch.
