  • 1/2 cup chocolate chips (optional)
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 cup caramel sauce (store-bought or homemade)
  • Sea salt (for sprinkling)

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. Prepare the brownie mix according to the package instructions. If you like, fold in the chocolate chips. Pour the brownie batter into the prepared pan. Bake for 20-25 minutes or until a toothpick inserted comes out with a few moist crumbs. Remove from the oven and let it cool slightly.
  3. In a large bowl, beat the softened cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each. Stir in the vanilla extract and sour cream until fully combined.
  4. Pour the cheesecake filling over the cooled brownie layer in the springform pan and spread it evenly.
  5. Bake for 50-60 minutes, or until the center is set with a slight jiggle. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour.
  6. Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight before serving.
  7. Before serving, drizzle the top with caramel sauce and sprinkle with sea salt. Carefully remove the springform pan, slice, and serve chilled.

Notes

For a richer flavor, add a touch of espresso powder to the brownie mix. Customize with toppings like crushed nuts or chocolate shavings.
