- 1 package brownie mix
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/4 cup sour cream
- 1/4 cup heavy cream
- 1/2 cup caramel sauce plus extra for drizzling
- Whipped cream and chocolate shavings for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Mix and bake the brownie batter in a greased 9-inch springform pan. Follow package instructions for baking time, then let it cool completely.
- Once the brownie base is cool, reduce the oven temperature to 325°F (160°C).
- In a large bowl, blend the softened cream cheese and sugar until smooth. Add the vanilla extract and eggs one at a time, mixing well after each addition.
- Mix in the sour cream and heavy cream until well combined.
- Pour the cheesecake mixture over the cooled brownie base.
- Drizzle some caramel sauce on top, and use a knife to swirl it into the cheesecake layer.
- Bake the cheesecake until the center is set but slightly jiggly, about 50-60 minutes.
- Turn off the oven and leave the cheesecake inside to cool gradually for about an hour.
- Refrigerate the cheesecake overnight before serving.
- Garnish with extra caramel sauce, whipped cream, and chocolate shavings before slicing and serving chilled.
Notes
Make sure cream cheese is at room temperature for a smooth batter. Cooling the cheesecake in the oven helps to prevent cracks.
