- 1 box (18 oz) brownie mix (plus ingredients listed on the box)
- 1/2 cup chopped pecans (optional)
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1 cup caramel sauce (store-bought or homemade)
- 1/4 cup heavy cream
- 1/2 cup chopped pecans or chocolate chips for garnish (optional)
Instructions
- Preheat your oven to 325°F (160°C). Prepare the brownie batter according to the package instructions. If desired, stir in chopped pecans. Pour the brownie batter into a greased and parchment-lined 9-inch springform pan and spread it evenly. Bake for 20 minutes, or until the edges are set and the center is slightly underbaked. Let it cool slightly.
- In a large mixing bowl, beat the softened cream cheese and sugar together until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and sour cream. Pour the cheesecake batter over the cooled brownie base and smooth the top.
- Place the springform pan on a baking sheet and bake for 50-60 minutes, until the edges are set and the center slightly jiggles. Turn off the oven and let the cheesecake cool inside with the door ajar for 1 hour. Then remove and let cool to room temperature before refrigerating for at least 4 hours or overnight.
- In a small bowl, mix the caramel sauce and heavy cream until smooth. Pour the caramel over the chilled cheesecake and spread it evenly. Garnish with chopped pecans or chocolate chips if desired.
Notes
To store, keep cheesecake in an airtight container in the refrigerator for up to 5 days or freeze for up to 2 months.
