Instructions
- Prepare the Cinnamon Apples: In a saucepan, combine apples, brown sugar, and cinnamon. Cook over medium heat until soft and thickened. Set aside to cool.
- Make the Vanilla Wafer Crust: Mix vanilla wafer crumbs and melted butter. Press into 28 (2-ounce) plastic cups.
- Prepare the Caramel Mousse: Combine pudding mix and milk in a bowl. Chill for 5 minutes, then add caramel sauce and mix until smooth. Whip in heavy cream until thick.
- Assemble the Dessert Cups: Pipe mousse into cups over the crust, layer cinnamon apples, and drizzle with caramel sauce.
- Chill and Serve: Seal cups and refrigerate. Serve immediately or store for 2-3 days.
