Delicious dessert cups combining creamy caramel mousse with sweet cinnamon apples and a crunchy vanilla wafer crust.

- 4 cups apples, peeled and chopped
- 1/2 cup light brown sugar
- 1 tsp cinnamon
- 2 cups vanilla wafer crumbs
- 1/4 cup salted or unsalted butter, melted
- 1 package instant vanilla pudding mix (3.4 ounces)
- 1 cup milk
- 1/3 cup salted caramel sauce
- 1 1/2 cups heavy cream
- Additional caramel sauce for garnish
Instructions
- In a medium saucepan, combine apples, brown sugar, and cinnamon. Cook over medium heat until apples are soft and liquid thickens. Set aside to cool.
- In a mixing bowl, combine vanilla wafer crumbs and melted butter. Mix well and portion into 28 plastic cups, pressing down to create a crust.
- In a large mixing bowl, combine pudding mix and milk. Whisk and chill for 5 minutes. Add caramel sauce and mix until smooth. Pour in heavy cream and whip until thick and creamy.
- Transfer the mousse into a piping bag and pipe into cups over the crust. Add cinnamon apples on top and drizzle with caramel if desired.
- Seal the cups and chill for 2-3 days before serving.
Notes
Choose firm apples for the best texture. Adjust sweetness based on personal preference.
