Ingredients

  • 2 apples (peeled and chopped into cubes)
  • 1/2 teaspoon cinnamon
  • 1/8 cup cornstarch
  • 1/3 cup sugar
  • 1 cup water
  • 1/8 teaspoon nutmeg
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 teaspoon lemon juice
  • 4 small flour tortillas
  • 1/4 cup sugar (for coating)
  • 1/2 tablespoon cinnamon (for coating)
  • 45 teaspoons caramel sauce
  • 1/4 cup vegetable oil

Instructions

  1. Make the Apple Pie Filling: In a saucepan, combine water, sugar, salt, lemon juice, cinnamon, vanilla, nutmeg, and cornstarch. Stir and heat over medium heat for about 3 minutes. Add the apples and cook for another 10 minutes. Remove from heat and set aside to cool.
  2. Prepare the Chimichangas: Mix sugar and cinnamon together for coating. Place caramel sauce in the center of each tortilla, add the apple filling on top, and fold the sides of the tortilla, rolling them up tightly. Secure each with a toothpick.
  3. Fry the Chimichangas: Heat vegetable oil in a pan over medium heat. Fry the chimichangas until golden brown, about 2-3 minutes on each side. Remove from the pan and let drain on paper towels.
  4. Coat with Cinnamon-Sugar: While warm, roll the chimichangas in the cinnamon-sugar mixture. Drizzle extra caramel sauce over them before serving.
