  • 2 cups graham crackers, crumbled fine
  • 2 tablespoons butter, melted
  • 1 1⁄2 cups canned apple pie filling
  • 2 (8-ounce) packages cream cheese, room temperature
  • 1/2 cup granulated sugar
  • 1/4 teaspoon vanilla extract
  • 2 large eggs, room temperature
  • 1/4 cup caramel topping
  • 1/2 cup apple pie filling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix the crushed graham crackers and melted butter until coated, then press into the bottom of a 7-inch springform pan to form the crust.
  3. Spoon 1 1⁄2 cups of apple pie filling evenly over the crust.
  4. In a large bowl, whip the cream cheese until fluffy. Add the sugar, vanilla extract, and eggs, beating until smooth and well combined. Pour the mixture over the apple pie filling.
  5. Bake for 50-55 minutes, or until the center is set. Allow cooling to room temperature.
  6. In a small saucepan over medium heat, combine the caramel topping and 1⁄2 cup of apple pie filling. Heat gently until warm and combined (about 1 minute).
  7. Spoon the apple-caramel mixture over the cooled cheesecake and spread evenly. Refrigerate until ready to serve.

Notes

For an extra flavorful crust, add a pinch of cinnamon to the graham cracker mixture. Use room temperature cream cheese for a smoother filling.
