- 2 cups graham crackers, crumbled fine
- 2 tablespoons butter, melted
- 1 1⁄2 cups canned apple pie filling
- 2 (8-ounce) packages cream cheese, room temperature
- 1/2 cup granulated sugar
- 1/4 teaspoon vanilla extract
- 2 large eggs, room temperature
- 1/4 cup caramel topping
- 1/2 cup apple pie filling
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, mix the crushed graham crackers and melted butter until coated, then press into the bottom of a 7-inch springform pan to form the crust.
- Spoon 1 1⁄2 cups of apple pie filling evenly over the crust.
- In a large bowl, whip the cream cheese until fluffy. Add the sugar, vanilla extract, and eggs, beating until smooth and well combined. Pour the mixture over the apple pie filling.
- Bake for 50-55 minutes, or until the center is set. Allow cooling to room temperature.
- In a small saucepan over medium heat, combine the caramel topping and 1⁄2 cup of apple pie filling. Heat gently until warm and combined (about 1 minute).
- Spoon the apple-caramel mixture over the cooled cheesecake and spread evenly. Refrigerate until ready to serve.
Notes
For an extra flavorful crust, add a pinch of cinnamon to the graham cracker mixture. Use room temperature cream cheese for a smoother filling.
