- 2 cups graham crackers, crumbled fine
- 2 tablespoons butter, melted
- 1 1/2 cups canned apple pie filling
- 2 (8-ounce) packages cream cheese, room temperature
- 1/2 cup sugar
- 1/4 teaspoon vanilla extract
- 2 large eggs, room temperature
- 1/4 cup caramel topping
- 1/2 cup apple pie filling, canned or homemade
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the crushed graham crackers and melted butter until the crumbs are fully coated. Press the mixture into the bottom of a 7-inch springform pan.
- Spoon 1 1/2 cups of apple pie filling over the crust, spreading it out evenly.
- In a large bowl, beat the cream cheese until fluffy and smooth. Add the sugar, vanilla extract, and eggs, beating until smooth.
- Pour the cream cheese mixture over the apple pie filling in the crust, spreading it out evenly.
- Bake for 50-55 minutes, or until the center is set and no longer jiggly.
- Allow to cool to room temperature in the pan.
- In a small saucepan over medium heat, combine the remaining 1/2 cup of apple pie filling and caramel topping. Heat for 1 minute until warm.
- Spoon the warm apple-caramel mixture over the cheesecake.
- Chill in the refrigerator until ready to serve. Slice and serve chilled.
Notes
For best results, ensure cream cheese is at room temperature and cool the cheesecake completely before adding the topping.
