Delicious muffins combining coffee and chocolate, perfect for breakfast or a snack.

- 300g (2 1⁄2 cups) all-purpose flour
- 1 tsp baking powder
- 1⁄2 tsp baking soda
- 1⁄2 tsp salt
- 130g (2⁄3 cup) vegetable oil (sunflower oil)
- 50g (1⁄4 cup) granulated sugar
- 100g (1⁄2 cup) brown sugar
- 2 large eggs (room temperature)
- 1 stick instant coffee powder
- 1 1⁄2 tsp vanilla extract
- 250ml (1 cup) buttermilk
- 150g (1 cup) chocolate chips
- 120g (1 cup) icing sugar
- 1 stick instant coffee for the glaze
- 1–2 tsp water
- Vanilla extract (optional)
Instructions
- Preheat your oven to 428°F (220°C) and line a muffin pan with paper liners.
- In a large bowl, whisk together the eggs, vegetable oil, white sugar, brown sugar, vanilla extract, and instant coffee for about 3 minutes until smooth.
- Add the buttermilk and mix again until everything is well incorporated.
- Gently fold in the dry ingredients (flour, baking powder, baking soda, salt) until a thick batter forms. Stir in the chocolate chips.
- Divide the batter evenly among the muffin liners, filling them completely. Top with extra chocolate chips.
- Bake for 5 minutes, then reduce the temperature to 374°F (190°C) and bake for another 10-15 minutes, until a toothpick comes out clean. Let the muffins cool slightly in the pan before transferring them to a wire rack to cool completely.
- For the glaze, dissolve the instant coffee in 1 tsp of water in a small bowl. Add the icing sugar and mix until smooth.
- Drizzle the glaze over the cooled muffins and enjoy!
Notes
Best served warm or at room temperature. Store in an airtight container for up to 3 days, or freeze for up to 3 months.
