Instructions

  1. Preheat the oven to 350°F and grease a 12-cup muffin tin.
  2. Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until combined.
  4. Whisk together the flour, baking soda, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll the dough into 1-inch balls and press into the muffin tin to shape cup forms.
  7. Bake for 10-12 minutes, or until edges are golden brown.
  8. Allow to cool completely in the muffin tin before removing.
  9. For the filling, combine ricotta, mascarpone, powdered sugar, and vanilla extract until smooth.
  10. Fold in mini chocolate chips.
  11. Spoon or pipe filling into cooled cookie cups.
  12. Chill for 1 hour before serving.
