- 8 oz cream cheese, softened
- 1 cup powdered sugar

- 1/2 cup mini marshmallows
- 1/2 cup crushed candy canes (plus extra for garnish)

Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined.
- Press this mixture firmly into the bottom of a 9-inch pie dish. Bake the crust for 8-10 minutes until lightly golden, then set aside to cool completely.
- In a large mixing bowl, beat the softened cream cheese with powdered sugar until smooth.
- Add the heavy whipping cream, peppermint extract, and vanilla extract. Beat until thick and fluffy.
- Gently fold in the mini marshmallows and crushed candy canes, leaving a few pieces for topping. If desired, add a few drops of red food coloring for a festive swirl effect.
- Spoon the filling into the cooled crust and spread it evenly.
- Refrigerate the pie for at least 3 hours, or overnight, to allow it to set.
- Before serving, top with whipped cream and sprinkle with extra crushed candy canes for garnish.
Notes
For a chocolate twist, you can add chocolate chips or use a chocolate graham cracker crust instead. Store leftovers in the refrigerator, best enjoyed within 3-4 days.
