Description

A flavorful Cajun dish featuring shrimp and smoked sausage cooked with colorful bell peppers, perfect for weeknight dinners.


Ingredients

  • 1 lb large shrimp, peeled & deveined
  • 12 oz smoked sausage (andouille or kielbasa), sliced into coins
  • 2 tbsp olive oil (divided)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the sausage and cook until browned, about 5 minutes.
  3. Remove sausage from the skillet and set aside.
  4. Add the remaining tablespoon of olive oil to the skillet.
  5. Add the sliced bell peppers and sauté until tender, about 4-5 minutes.
  6. Return the sausage to the skillet.
  7. Add the shrimp and cook until pink and opaque, about 3-4 minutes.
  8. Season with salt, pepper, and Cajun seasoning if desired.
  9. Serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet over medium heat.
