Ingredients

- 1 lb large shrimp, peeled & deveined
- 12 oz smoked sausage (andouille or kielbasa), sliced into coins
- 2 tbsp olive oil (divided)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the sausage and cook until browned, about 5 minutes.
- Remove sausage from the skillet and set aside.
- Add the remaining tablespoon of olive oil to the skillet.
- Add the sliced bell peppers and sauté until tender, about 4-5 minutes.
- Return the sausage to the skillet.
- Add the shrimp and cook until pink and opaque, about 3-4 minutes.
- Season with salt, pepper, and Cajun seasoning if desired.
- Serve hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet over medium heat.
