Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tbsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup chicken broth
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 20 oz package of cheese tortellini, cooked according to package directions
  • Chopped chives for garnish (optional)

Instructions

  1. In a large bowl, toss the chicken pieces with olive oil, Cajun seasoning, garlic powder, smoked paprika, and black pepper until evenly coated.
  2. Heat a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
  4. Whisk in the flour and cook for another minute, stirring constantly to create a roux.
  5. Gradually whisk in the milk and chicken broth until smooth. Bring the mixture to a simmer, stirring constantly.
  6. Reduce heat to low and stir in the softened cream cheese, mozzarella cheese, Parmesan cheese, and cheddar cheese until melted and smooth. Season with salt and pepper to taste.
  7. Add the cooked tortellini and cooked chicken to the cheese sauce. Stir gently to combine and coat the tortellini and chicken evenly with the sauce.
  8. Simmer for another 2-3 minutes, allowing the flavors to meld together.
  9. Serve immediately, garnished with chopped chives, if desired.

Notes

Serve hot, pairs well with side salad or garlic bread. Adjust Cajun seasoning to taste.
