A delicious and creamy dish combining Cajun spices with tender chicken and cheese-filled tortellini, perfect for family dinners or special occasions.

- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 2 tbsp olive oil
- 2 tbsp Cajun seasoning
- 1 tbsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 4 tbsp butter
- 4 cloves garlic, minced
- 1/4 cup all-purpose flour
- 3 cups whole milk
- 1 cup chicken broth
- 4 oz cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded cheddar cheese
- 20 oz package of cheese tortellini, cooked according to package directions
- Chopped chives for garnish (optional)
Instructions
- In a large bowl, toss the chicken pieces with olive oil, Cajun seasoning, garlic powder, smoked paprika, and black pepper until evenly coated.
- Heat a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
- Whisk in the flour and cook for another minute, stirring constantly to create a roux.
- Gradually whisk in the milk and chicken broth until smooth. Bring the mixture to a simmer, stirring constantly.
- Reduce heat to low and stir in the softened cream cheese, mozzarella cheese, Parmesan cheese, and cheddar cheese until melted and smooth. Season with salt and pepper to taste.
- Add the cooked tortellini and cooked chicken to the cheese sauce. Stir gently to combine and coat the tortellini and chicken evenly with the sauce.
- Simmer for another 2-3 minutes, allowing the flavors to meld together.
- Serve immediately, garnished with chopped chives, if desired.
Notes
Serve hot, pairs well with side salad or garlic bread. Adjust Cajun seasoning to taste.
