Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1 lb rotini pasta
  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 3 cups milk
  • 2 cups heavy cream
  • 4 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • Salt to taste

Instructions

  1. In a large pot, cook the rotini pasta in salted boiling water until al dente. Drain and set aside.
  2. In a bowl, combine chicken cubes with olive oil, Cajun seasoning, smoked paprika, black pepper, and minced garlic. Toss until well coated.
  3. Heat 2 tablespoons butter in a large skillet over medium-high heat. Add seasoned chicken and cook for 6–8 minutes, stirring occasionally, until browned and fully cooked. Transfer to a plate and set aside.
  4. In the same skillet, melt remaining 4 tablespoons of butter over medium heat. Whisk in the flour and cook for 1–2 minutes to form a light roux.
  5. Slowly pour in milk and heavy cream, whisking until smooth. Bring to a gentle simmer and let it thicken slightly.
  6. Add mozzarella, Parmesan, garlic powder, and a pinch of salt. Stir until cheeses melt and sauce is smooth and creamy.
  7. Add cooked rotini to the skillet and toss to coat. Gently stir in chicken and heat through for another minute or two.
  8. Enjoy warm, garnished with chopped chives or extra Parmesan if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of milk if the sauce is too thick.
