- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tbsp olive oil
- 2 tbsp butter
- 4 cloves garlic, minced
- 2 tbsp Cajun seasoning
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1 lb rotini pasta
- 4 tbsp butter
- 4 tbsp all-purpose flour
- 3 cups milk
- 2 cups heavy cream
- 4 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- Salt to taste
Instructions
- In a large pot, cook the rotini pasta in salted boiling water until al dente. Drain and set aside.
- In a bowl, combine chicken cubes with olive oil, Cajun seasoning, smoked paprika, black pepper, and minced garlic. Toss until well coated.
- Heat 2 tablespoons butter in a large skillet over medium-high heat. Add seasoned chicken and cook for 6–8 minutes, stirring occasionally, until browned and fully cooked. Transfer to a plate and set aside.
- In the same skillet, melt remaining 4 tablespoons of butter over medium heat. Whisk in the flour and cook for 1–2 minutes to form a light roux.
- Slowly pour in milk and heavy cream, whisking until smooth. Bring to a gentle simmer and let it thicken slightly.
- Add mozzarella, Parmesan, garlic powder, and a pinch of salt. Stir until cheeses melt and sauce is smooth and creamy.
- Add cooked rotini to the skillet and toss to coat. Gently stir in chicken and heat through for another minute or two.
- Enjoy warm, garnished with chopped chives or extra Parmesan if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of milk if the sauce is too thick.
