Cajun Chicken Rigatoni

Description

A delicious pasta dish combining Cajun spices, tender chicken, creamy sauce, and sun-dried tomatoes.


Ingredients

  • 12 oz rigatoni pasta
  • 1 lb chicken breast (cut into bite-sized pieces)
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan
  • Salt & pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Boil rigatoni until al dente. Drain and set aside.
  2. Toss chicken with Cajun seasoning. In a large skillet, heat olive oil and cook chicken until golden and fully cooked. Set aside.
  3. In the same skillet, melt butter and sauté garlic for 1 minute. Add sun-dried tomatoes, cream, and broth. Simmer for 3–5 minutes.
  4. Stir in Parmesan cheese. Add cooked pasta and chicken, tossing to coat in the creamy Cajun sauce.
  5. Garnish with chopped parsley and extra Parmesan if desired.

Notes

Adjust the amount of Cajun seasoning for less heat. Can substitute heavy cream with Greek yogurt for a lighter version.
