A delicious pasta dish combining Cajun spices, tender chicken, creamy sauce, and sun-dried tomatoes.
Ingredients

- 12 oz rigatoni pasta
- 1 lb chicken breast (cut into bite-sized pieces)
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic (minced)
- 1/2 cup sun-dried tomatoes (chopped)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan
- Salt & pepper to taste
- Fresh parsley (for garnish)
Instructions
- Boil rigatoni until al dente. Drain and set aside.
- Toss chicken with Cajun seasoning. In a large skillet, heat olive oil and cook chicken until golden and fully cooked. Set aside.
- In the same skillet, melt butter and sauté garlic for 1 minute. Add sun-dried tomatoes, cream, and broth. Simmer for 3–5 minutes.
- Stir in Parmesan cheese. Add cooked pasta and chicken, tossing to coat in the creamy Cajun sauce.
- Garnish with chopped parsley and extra Parmesan if desired.
Notes
Adjust the amount of Cajun seasoning for less heat. Can substitute heavy cream with Greek yogurt for a lighter version.
