- 3 cups whole milk
- 1 cup chicken broth
- 1 cup shredded Monterey Jack cheese
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 tablespoons Cajun seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1 pound bowtie pasta
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- Salt to taste
- Freshly ground black pepper to taste
- Optional: Chopped green onions for garnish
Instructions
- In a large bowl, toss the chicken cubes with olive oil, Cajun seasoning, garlic powder, and smoked paprika until evenly coated.
- Heat a large skillet over medium-high heat and cook the seasoned chicken for 6-8 minutes until golden brown and cooked through. Set aside.
- Cook the bowtie pasta according to package directions, then drain and set aside.
- In a large saucepan, melt the butter over medium heat, whisk in the flour, and cook for 1-2 minutes to create a roux.
- Gradually whisk in the milk and chicken broth, bringing to a simmer, stirring constantly until the sauce thickens, about 5-7 minutes.
- Reduce heat to low and stir in the Monterey Jack, cheddar, and Parmesan cheeses until melted and smooth. Season with salt and pepper.
- Add the cooked pasta and golden Cajun chicken to the sauce, tossing gently to combine.
- Serve hot, garnished with chopped green onions if desired.
Notes
For more heat, increase Cajun seasoning. You can add vegetables like bell peppers or spinach for added nutrition. Store leftovers in an airtight container for 3-4 days.
