Ingredients

  • 2 boneless, skinless chicken breasts, cut into strips
  • 12 oz linguine pasta
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a small bowl, mix Cajun seasoning, smoked paprika, garlic powder, salt, and pepper. Rub this mixture onto the chicken strips.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken strips and cook for 6-7 minutes, turning halfway, until browned and cooked through. Remove from the skillet and set aside.
  3. Bring a large pot of salted water to boil. Cook the linguine according to package instructions. Drain and set aside, saving 1/2 cup of pasta water.
  4. In the same skillet, add more olive oil if needed and sauté the minced garlic over medium heat for 1 minute until fragrant. Pour in the chicken broth, scraping up browned bits from the skillet. Stir in the heavy cream and bring to a simmer. Let the sauce cook for 2-3 minutes, thickening slightly.
  5. Add the cooked linguine to the skillet, tossing it to coat in the creamy sauce. Stir in the grated Parmesan cheese and cook for another 1-2 minutes until the cheese melts and the sauce becomes creamy.
  6. Return the cooked Cajun chicken to the skillet and toss everything together. Garnish with fresh parsley and serve.

Notes

Adjust Cajun seasoning to taste. For a kick, add red pepper flakes. Use freshly grated Parmesan for best flavor.
