A delicious and satisfying dish combining Cajun flavors with creamy Parmesan linguine pasta, perfect for weeknight dinners or entertaining guests.

- 2 boneless, skinless chicken breasts, cut into strips
- 12 oz linguine pasta
- 2 tablespoons olive oil
- 2 tablespoons Cajun seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- In a small bowl, mix Cajun seasoning, smoked paprika, garlic powder, salt, and pepper. Rub this mixture onto the chicken strips.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken strips and cook for 6-7 minutes, turning halfway, until browned and cooked through. Remove from the skillet and set aside.
- Bring a large pot of salted water to boil. Cook the linguine according to package instructions. Drain and set aside, saving 1/2 cup of pasta water.
- In the same skillet, add more olive oil if needed and sauté the minced garlic over medium heat for 1 minute until fragrant. Pour in the chicken broth, scraping up browned bits from the skillet. Stir in the heavy cream and bring to a simmer. Let the sauce cook for 2-3 minutes, thickening slightly.
- Add the cooked linguine to the skillet, tossing it to coat in the creamy sauce. Stir in the grated Parmesan cheese and cook for another 1-2 minutes until the cheese melts and the sauce becomes creamy.
- Return the cooked Cajun chicken to the skillet and toss everything together. Garnish with fresh parsley and serve.
Notes
Adjust Cajun seasoning to taste. For a kick, add red pepper flakes. Use freshly grated Parmesan for best flavor.
