  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 lb rigatoni pasta
  • 4 tbsp butter
  • 2 cloves garlic, minced
  • 3 cups heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 green onions, thinly sliced, for garnish

Instructions

  1. In a bowl, combine the chicken cubes, Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 6-8 minutes. Set aside.
  3. While the chicken is cooking, cook the rigatoni according to package directions until al dente. Drain and set aside.
  4. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  5. Pour in the heavy cream and chicken broth. Bring to a simmer, then reduce heat to low. Stir in the Parmesan cheese and mozzarella cheese until melted and smooth.
  6. Add the cooked rigatoni to the sauce and toss to coat. Gently fold in the cooked chicken.
  7. Serve immediately, garnished with sliced green onions.
