- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tbsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 lb rigatoni pasta
- 4 tbsp butter
- 2 cloves garlic, minced
- 3 cups heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 2 green onions, thinly sliced, for garnish
Instructions
- In a bowl, combine the chicken cubes, Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 6-8 minutes. Set aside.
- While the chicken is cooking, cook the rigatoni according to package directions until al dente. Drain and set aside.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
- Pour in the heavy cream and chicken broth. Bring to a simmer, then reduce heat to low. Stir in the Parmesan cheese and mozzarella cheese until melted and smooth.
- Add the cooked rigatoni to the sauce and toss to coat. Gently fold in the cooked chicken.
- Serve immediately, garnished with sliced green onions.
Notes
Use fresh ingredients for best flavor. Marinate chicken for a couple of hours to enhance flavor. For added nutrition, incorporate veggies like bell peppers or spinach.
