A delicious one-pot meal combining smoked sausage, vegetables, and rice, infused with the vibrant flavors of Cajun cooking.

- 1 lb smoked sausage, sliced
- 1 tbsp olive oil
- 1/2 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 1 cup shredded green cabbage
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup long-grain white rice (uncooked)
- 2 cups chicken broth
- 1 tbsp Cajun seasoning
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the sliced sausage and cook until browned. Remove the sausage from the pot and set it aside.
- In the same pot, add the chopped onion, bell pepper, celery, and cabbage. Sauté until softened, about 5–7 minutes. Add the minced garlic and cook for 1 more minute.
- Stir in the diced tomatoes (with juice), uncooked rice, chicken broth, Cajun seasoning, salt, and pepper. Bring to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for 20–25 minutes or until the rice is cooked and the liquid is absorbed.
- Stir in the cooked sausage. Let the dish sit for 5 minutes before serving. Garnish with chopped fresh parsley.
Notes
For added spice, include a pinch of cayenne pepper or hot sauce. Substitute smoked sausage with chicken, shrimp, or tofu for variations.
