Description

A delicious one-pot meal combining smoked sausage, vegetables, and rice, infused with the vibrant flavors of Cajun cooking.


Ingredients

  • 1 lb smoked sausage, sliced
  • 1 tbsp olive oil
  • 1/2 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 1 cup shredded green cabbage
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup long-grain white rice (uncooked)
  • 2 cups chicken broth
  • 1 tbsp Cajun seasoning
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the sliced sausage and cook until browned. Remove the sausage from the pot and set it aside.
  2. In the same pot, add the chopped onion, bell pepper, celery, and cabbage. Sauté until softened, about 5–7 minutes. Add the minced garlic and cook for 1 more minute.
  3. Stir in the diced tomatoes (with juice), uncooked rice, chicken broth, Cajun seasoning, salt, and pepper. Bring to a boil.
  4. Reduce the heat to low, cover the pot, and let it simmer for 20–25 minutes or until the rice is cooked and the liquid is absorbed.
  5. Stir in the cooked sausage. Let the dish sit for 5 minutes before serving. Garnish with chopped fresh parsley.

Notes

For added spice, include a pinch of cayenne pepper or hot sauce. Substitute smoked sausage with chicken, shrimp, or tofu for variations.
