- 2.25 lbs ground beef
- 1 (16 oz) block Velveeta cheese, cubed
- 1 (8 oz) block cream cheese, softened
- 1 can cream of chicken soup
- 1 can Rotel tomatoes with chilies (undrained)
- 8 oz rotini pasta (or bowtie/farfalle)
- 1 1/2 tsp Cajun seasoning (or to taste)
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and black pepper, to taste
- (Optional) 1 cup reserved pasta water to thin the sauce
- Fresh chopped parsley or green onion, for garnish
Instructions
- Cook the rotini in salted water until al dente. Drain and set aside, saving 1 cup of pasta water in case the sauce needs thinning.
- In a large skillet, brown the ground beef over medium-high heat. Season with Cajun seasoning, smoked paprika, garlic powder, salt, and pepper. Drain any excess grease.
- Lower the heat and make the Spicy Cheese Sauce by stirring in the Velveeta cubes, cream cheese, cream of chicken soup, and the entire can of Rotel (with juices). Stir constantly until the cheeses melt together into a thick, creamy sauce packed with flavor.
- Add the cooked pasta to the skillet and mix until every bite is coated in that spicy, cheesy goodness. Add reserved pasta water a little at a time if you want it extra saucy.
- Spoon the mixture into bowls and garnish with chopped parsley or green onion.
