  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rhubarb, chopped into small pieces
  • 1/4 cup white chocolate chips (optional)
  • For the Streusel Topping:
  • 1/3 cup all-purpose flour
  • 1/4 cup brown sugar
  • 2 tablespoons unsalted butter, melted
  • 1/4 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set this aside.
  3. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the chopped rhubarb and white chocolate chips if using.
  7. Pour the batter into the prepared pan and smooth it out evenly.
  8. For the streusel topping, mix together the flour, brown sugar, melted butter, and cinnamon in a small bowl until crumbly. Sprinkle this mixture evenly over the batter.
  9. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  10. Let the blondies cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
  11. Slice into squares and enjoy!

Notes

Store leftovers in an airtight container at room temperature for up to a week. Can freeze for longer storage.
