  • 1 cup (227g) butter, room temperature
  • 1 3/4 cup (350g) brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups finely grated and drained zucchini, packed
  • 1 1/2 cups butterscotch morsels

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a large mixing bowl, cream together the butter and brown sugar until smooth and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Fold in the grated zucchini and butterscotch morsels.
  7. Spread the batter evenly into the prepared pan and smooth the top.
  8. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the bars to cool completely in the pan before slicing them into squares.

Notes

Make sure to drain the grated zucchini well to avoid a soggy texture.
